Interpretación de Perú
Nuestra propuesta de diseño para el restaurante Luma nace de escuchar a Omar Malpartida hablando sobre su interpretación personal de la gastronomía Peruana y su exportación internacional.
De la misma manera que el Chasqui llevaba mensajes codificados en su Quipu textil, Malpartida transmite su saber, convirtiéndose en un mensajero personal. Viajando desde Perú hasta Madrid para dar a conocer su gastronomía, crea platos únicos atando ambas culturas. También el cliente tendrá que vivir esta experiencia transitando el restaurante, recorriéndolo por sí mismo para descubrir su contenido.
Our design proposal for the Luma restaurant was born from listening to Omar Malpartida talking about his personal interpretation of Peruvian gastronomy and its international exportation.
In the same way that the Chasqui carried coded messages in his textile Quipu, Malpartida transmits his knowledge, becoming a personal messenger. Traveling from Peru to Madrid to make his gastronomy known, he creates unique dishes linking both cultures. The customer will also have to live this experience by passing through the restaurant, walking through it by himself to discover its contents.
Para ello, es imprescindible que el cliente viva un viaje gustativo, sí, pero a la vez olfativo y visual. Así la Arquitectura debe seguir al concepto gastronómico, la base del proyecto de interiorismo es la interpretación personal de Omar.
Su historia y autenticidad cobra vida de manera sutil en el espacio, llevando los paisajes y materiales de la selva, costa y sierra Peruanas…recorriendo en el restaurante Luma ambientes que evocan los paisajes peruanos y la esencia española, perdiéndose en una mezcla de materiales, tratamientos y texturas.
For this, it is essential that the client experiences a gustatory journey, yes, but at the same time olfactory and visual. So the architecture must follow the gastronomic concept, the basis of the interior design project is the personal interpretation of Omar.
His history and authenticity comes to life in a subtle way in the space, bringing the landscapes and materials of the Peruvian jungle, coast and highlands…traveling in the Luma restaurant environments that evoke the Peruvian landscapes and the Spanish essence, getting lost in a mixture of materials, treatments and textures.
Madrid
El local que nos encontramos se encuentra junto a la Puerta de Alcalá, muy próximo al Retiro, y sin embargo, escondido. No queremos un lugar de paso, sino de peregrinación.
The place we found is located next to the Puerta de Alcalá, very close to the Retiro, and yet hidden. We do not want a place of passage, but of pilgrimage.
El local, a los pies de un edificio histórico, es amplio y conserva un esquema de funcionamiento inteligente, nos da juego para poner en práctica nuestra filosofía de reciclaje, conservando todo aquello que sea de valor. La joyita, un patio generoso y luminoso que introduce el cielo al interior. Además, algunas piezas interesantes, una barra central en torno a la cual se organiza todo el espacio principal o materiales como el granito, la madera o el acero de fundición se hallan presentes…eso sí, bien escondidos!
The premises, at the foot of a historic building, is spacious and retains an intelligent operating scheme, giving us the opportunity to put into practice our philosophy of recycling, preserving everything of value. The jewel in the crown, a generous and luminous patio that brings the sky inside. In addition, some interesting pieces, a central bar around which all the main space is organized or materials such as granite, wood or cast steel are present … yes, well hidden!
El local se compone de un espacio central en el acceso, donde nos recibe una cava de vinos espectacular, haciendo de filtro del restaurante. El salón principal se desarrolla en torno a la barra central, un bloque de granito que estructura todo el espacio.
The restaurant consists of a central space at the entrance, where we are greeted by a spectacular wine cellar, acting as a filter of the restaurant. The main room is developed around the central bar, a granite block that structures the entire space.
Un ventanal en este espacio nos abre al diálogo entre la historia madrileña del edificio con los paisajes del Perú en el patio…y al fondo la cocina vista, con el pase de platos de nuevo otro bloque compacto de granito…
A large window in this space opens us to the dialogue between the Madrid history of the building with the landscapes of Peru in the courtyard… and in the background the kitchen, with another compact block of granite plates…
Granito
El granito de la sierra madrileña, que recorre zócalos y pavimentos del edificio, lo rescatamos en las paredes y lo continuamos en parte del mobiliario. La gran barra central se levanta como una gran pieza monolítica de este mismo material, en memoria de las piezas escultóricas en piedra del Perú. Unas baldas de esta misma piedra se suspenden de unos tensores de acero a la manera en que los hilos y los nudos de los quipus escribían los textos. Así se levanta una vinoteca que hibrida lenguajes de las dos tierras, convirtiéndose en la fachada del restaurante. También apoyamos grandes piezas de granito sobre piezas de madera reciclada bien robustas, constituyendo las mesas sobre las que se servirán los platos.
The granite from the mountains of Madrid, which runs along the baseboards and floors of the building, we rescued it in the walls and continued it in part of the furniture. The large central bar rises as a large monolithic piece of this same material, in memory of the sculptural pieces in Peruvian stone. Shelves of the same stone are suspended from steel tensors in the same way that the threads and knots of the quipus used to write texts. This is how a wine cellar that hybridizes languages of the two lands rises, becoming the façade of the restaurant. We also supported large pieces of granite on sturdy pieces of recycled wood, constituting the tables on which the dishes will be served.
Madera reciclada
La madera, la encontramos bajo capas y capas de pintura y minio en puertas y contraventanas, trabajo de arqueología que merece ha merecido la pena realizar. En colaboración con la madera que incorporamos reciclada de antiguos andamios de la construcción, aporta naturalidad y calidez al espacio, construyendo estanterías que muestran productos traídos del Perú. Su diseño, en contraste con lo rústico del propio material, recuerda delicadamente a la secuencia de paisajes que se siguen tras las ventanas de un tren en movimiento. Se respira viaje!
The wood, found under layers and layers of paint and minium in doors and shutters, archaeological work that has been worth doing. In collaboration with the wood that we incorporated recycled from old construction scaffolding, it brings naturalness and warmth to the space, building shelves that display products brought from Peru. Its design, in contrast to the rustic nature of the material itself, delicately reminds us of the sequence of landscapes that follow behind the windows of a moving train. It breathes travel!
Acero
El acero al carbono da forma a estructuras como el botellero, que abraza los pilares en hierro fundido de nada menos que el siglo XIX. De nuevo, ha merecido la pena el esfuerzo que se ha necesitado para llegar al origen de estas piezas, ocultas bajo capas y capas que ni el fuego ni la radial podían sacar.
Carbon steel gives shape to structures such as the bottle rack, which embraces cast iron pillars from no less than the 19th century. Once again, it has been worth the effort it has taken to get to the origin of these pieces, hidden under layers and layers that neither fire nor the radial could remove.
Iluminación artesanal
Este mismo material conforma las luminarias “palo”, diseño que hemos elaborado especialmente para este espacio. Su versatilidad nos permite enfocar la comida, como si de un teatro se tratase, o bien resaltar las texturas y cualidades en paredes y pilares. La iluminación pasa por nuestro departamento de reciclaje, consiguiendo dar nueva vida a lo valioso, transformándolo y reubicándolo. Qué mejor manera de no interferir en el medio ambiente que usando lo que ya tenemos!
Por otro lado, algunas piezas clave de iluminación aportan un punto de color y textura aunando diseño y artesanía, trayendo la alegría de la luz natural del Perú, pero también de España.
This same material makes up the “palo” luminaires, a design that we have developed especially for this space. Its versatility allows us to focus on the food, as if it were a theater, or to highlight the textures and qualities on walls and pillars. The lighting goes through our recycling department, managing to give new life to what is valuable, transforming and relocating it. What better way not to interfere with the environment than using what we already have!
On the other hand, some key pieces of lighting bring a point of color and texture combining design and craftsmanship, bringing the joy of natural light from Peru, but also from Spain.
Arcilla y cal
Por último, la tierra. Arcilla y cal revisten las paredes en el interior, dibujando texturas y paños superpuestos que nos evocan los paisajes de la sierra peruana. En este mismo material, el corazón del proyecto, un collage de frescos de cal que nos lleva a las calles del pueblo natal del chef, Huánaco.
Finally, the earth. Clay and lime coat the walls inside, drawing textures and overlapping cloths that evoke the landscapes of the Peruvian highlands. In this same material, the heart of the project, a collage of lime frescoes takes us to the streets of the chef’s hometown, Huanaco.
Un patio aliñado con mucho color, sirve de contrapunto a los interiores sobrios que no quieren robar protagonismo a la gastronomía. Aquí la gastronomía desaparece, abriendo paso al origen de los alimentos, vegetación selvática y colores que nos traen la costa de Perú, un huerto y mucha vida!
A colorful patio serves as a counterpoint to the sober interiors that do not want to steal the limelight from the gastronomy. Here the gastronomy disappears, giving way to the origin of the food, jungle vegetation and colors that bring us the coast of Peru, an orchard and lots of life!
En resumen, algo de industria y mucho de artesanía. La arquitectura es siempre un prototipo y ésta es nuestra propuesta para Malpartida, un experimento elaborado con amor y con fe.
In short, some industry and a lot of craftsmanship. Architecture is always a prototype and this is our proposal for Malpartida, an experiment elaborated with love and faith.
